A member of the legume family and native to South Africa, the needle-like leaves of the Rooibos plant are green before undergoing oxidation. This process, biochemically similar to the oxidation that certain teas undergo during processing, produces a deep-red liquor replete with vanilla, pipe tobacco, and citrus qualities.
